Keto/Low carb Biscuits & Sausage Gravy

 

I was having a hankering for biscuits and gravy, but regular biscuits have so many carbs!  So I went on a hunt for a good biscuit recipe and I found it!  At Tryketowith.me  had a killer recipe for Almond flour drop biscuits!  And, they’re only 2 carbs each!  So I started with that.   Be sure to use very cold butter and cut it in well, and do not overmix!

Then I made my homemade sausage gravy to go on top.  I was delighted that, with only minor tweaking, I was able to fit my sausage gravy into my macros.  I just substituted the milk in my recipe with heavy cream and water.  If you feel that’s too much cream, by all means, you can increase the water to 1/3 c. and decrease the cream to 2/3 c.

As pictured, 2 biscuits with half the recipe of sausage gravy, is 10 carbs.  Alternately, you could also do 1 biscuit, sliced in half and smothered with 1/4 of the sausage gravy and serve that with a side of eggs for a total of 5 carbs.  We actually did that the following morning, because we had two biscuits leftover and it was just as filling and delicious.

Sausage Gravy

Servings 4 biscuits

Ingredients

  • 1/2 lb Jimmy Dean sausage
  • 2 Tbsp Kentucky Kernel seasoning
  • 6 ounces Heavy whipping cream
  • 2 ounces Water

Instructions

  1. To a medium skillet over medium-high heat, add sausage, cook till no longer pink. About 3-4 min. 

  2. Meanwhile, combine heavy cream and water and warm in the microwave for 1 min. (when making gravies you always want the liquids to be room temp. to warm, never cold).

  3. Lower the temp. to med.  and add Kentucky Kernel seasoning to sausage and stir till completely mixed in, about 2 minutes.

  4. Add cream mixture and gently stir until slightly thickened.  About 2-3 min.  You can test by coating the back of a spoon (metal or wood, silicone doesn't work as well for this). If you run your finger down the length of the spoon and there is a path left behind, the gravy is ready.  If the path fills in, then you need to cook it a little longer. 

  5. Serve warm over biscuits.
